The Universidad Europea del Atlántico (European University of the Atlantic, UNEATLANTICO) welcomes the international student Mohamed Omer Mohieldin Khidir, who is conducting a training stay started on 6 April 2026 in the field of food research and sustainability. Its activity is part of the VidAanchoa project, focused on the study of the useful life of semi-preserved anchovies and the development of sustainable technologies for their conservation.
During his stay, the student participates in work related to characterizing the seasonal lipid profile of anchovy, evaluating its oxidative susceptibility and using Oxitest technology to analyze product stability. It also collaborates in the development of natural antioxidant formulations obtained from agricultural by-products and in sensory analysis tests, contributing to data processing and technical reports.
The activity is accompanied by Dr. Sandra Sumalla and Dr. Iñaki Elío, UNEATLANTICO researchers linked to this line of work, focused on food innovation, sustainability and the circular economy.
This academic mobility, developed between the Università Politecnica delle Marche and UNEATLANTICO, highlights the university’s commitment to internationalization and the promotion of educational experiences connected with applied research and knowledge transfer to the agri-food sector.
